Spirit Ashes are summoned through the corresponding Spirit-Caller’s Ash. You need to find them and then use the ash to summon the relevant spirit to help you in combat. When you summon a spirit it will consume some FP and you can only active one spirit per Rebirth Monument.
You can’t summon Spirits at every location but almost all boss fight areas allow you to summon spirits. Otherwise, you will have to be near a Rebirth Monument to summon a Spirit in Elden Ring.
Spirit Ashes are highly useful when facing bosses like the Tree Sentinel and Godrick the Golden. You can also upgrade the Spirit Ashes to make them even more effective in combat.
